Honeydew honey (miele di melata) from Sommariva del Bosco is an extraordinary product born not from flowers, but from tree sap gathered by bees in the woodlands of this transition zone toward the Roero region.

Visually, it features a dark, almost black color with warm amber highlights, and it maintains a thick, syrupy consistency for a long time, rarely crystallizing. On the nose, the aroma is intense and enveloping, with rich hints of caramel, malt, and resin.

The palate reveals its finest quality: it is significantly less sweet than nectar-based honeys. The flavor is rich, malty, and pleasantly herbal, with a persistent balsamic note reminiscent of carob and dried fruit.
